Makes 4-6 pitas
Ingredients
1 cup flour
1 ½ tsp baking powder
¼ tsp salt
~2 tbsp olive oil
Steps
Add flour, baking soda, and salt to a large bowl and whisk until combined. Add the greek yogurt and mix with a wooden spoon until combined. Knead the dough with your hands for about five minutes, sprinkling in more flour as needed if the dough is too sticky to handle. Cover with a damp kitchen towel and let rest for 15-30 minutes.
Cut the dough into four equal portions and roll into balls. Lightly flour a work surface like a large cutting board. Using a rolling pin, roll out each ball into as thin a layer as possible. The thinner the pitas are, the more likely they are to puff up in the pan and cook correctly. Use a pizza cutter to cut the pitas into circles and set excess aside - you can use it to roll up an additional 1-2 pitas.
Preheat cast iron to medium high heat and add olive oil. Add a pita and cook for about two minutes on each side, until puffy and golden brown. Flip and cook on the other side. Enjoy warm with tzatziki and fresh veggies.
