Serves 8 to 10
Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
¾ cup plus 1 teaspoon cane sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
2 eggs
1 teaspoon vanilla
1 cup Nounós Creamery Classic Plain Greek Yogurt
1 cup fresh strawberries, diced
¼ cup pecans
Directions
Preheat oven to 350°F.
In a large bowl, mix together first six ingredients.
In a smaller bowl, mix eggs, vanilla and yogurt.
Add wet ingredients to dry ingredients and mix until combined. Do not overmix. Gently fold in diced strawberries. Pour batter into a lightly greased loaf pan (or two small loaf pans) and top with chopped pecans.
Place in oven and bake for about 45 minutes for small loaf pans or 55 minutes for a large loaf pan.
